It’s back to school time and most parents find it hard to find time to make a home-cooked meal with all the craziness of the school/work week. This meal will save you time and is truly the easiest dinner you could ever make, and the kids could help too!

     It’s a healthy dinner full of veggies and you don’t even have to do any chopping, which is a huge time saver! Why no chopping? I used all frozen veggies and canned tomatoes! All you have to do is open up some bags. It’s basically like a “dump” recipe where you dump all the ingredients into a pot and you’re done!

FUN FACT: What gives tomatoes their bright red color? It’s a pigment called “Lycopene.” Lycopene is at its highest once tomatoes are cooked, such as tomato sauce. This pigment is known for helping to prevent many types of cancers. It can also help lower the “bad” cholesterol (LDL) in your body.

  1. Prep your pan with a couple tablespoons of olive oil. Sauté all frozen veggies for 5-10 minutes until soft and onions are translucent.

  2. Add cans of crushed and diced tomatoes, salt, pepper and garlic powder. Give it a good stir.

  3. Add entire box of pasta and 2 1/2 cups of water. Stir well so pasta is covered in sauce and water. Cover and cook on medium heat for 15 minutes. Stir, cover again and cook another 15 minutes until pasta is fully cooked.

  7. Once pasta is cooked, add shredded mozzarella and stir. Add more on top for garnish or add parmesan. It’s that easy!!
