Growing up I loved eating artichokes. My parents would simply steam them and we’d dip each leaf in olive oil and balsamic. I also loved stuffed artichokes with Italian breading stuffed inside…YUM! While thinking of an artichoke recipe I realized what a perfect vessel it is to hold my pasta! Thus, the Artichoke Pasta Bowl was born! I kept it green with spinach spaghetti and sautéed it with a lovely group of aromatics.

FUN FACT: The Cynarin in artichokes is the element that can rid your body of cholesterol and also have the highest antioxidant levels of all vegetables!

  1. Preheat oven to 375 degrees. Carefully clean your artichoke and cut top off as well as stem so it can sit flat. Gently spread the leaves outward.

  4. Bring water to a boil and cook for 30 minutes with lid on.

  5. In the meantime, make your filling by mixing your breadcrumbs, parsley, garlic powder and olive oil until it’s a paste.

  6. Cook pasta and chop and sauté the garlic, shallots, tomatoes and jarred artichoke hearts. Take off heat, squeeze juice of one lemon on top and stir.

  8. Once your artichokes have boiled for 30 minutes. Drain upside down and cool a bit. Stuff leaves with breading mixture. Scoop out center and leave hollowed out. Bake covered with foil for 20 minutes at 375 degrees.

  9. After you’ve baked your artichokes, carefully twirl spaghetti into the hollowed out center of the baked artichoke and enjoy!
