Welcome to “Christmas in July!” This year, Christmas in July is being celebrated through the act of giving. www.Christmasisnotcancelled.com is a wonderful organization created by one of Hallmark Channel’s most popular stars, Jen Lilly. This organization gives kids in foster care the opportunity to go to school with a backpack full of supplies to help them have a great and successful school year! Also, Camp Christmas in July, a virtual camp, has stemmed from this fundraiser. You can sign up for camp at www.christmasisnotcanceled.com. There are so many fun games, zooms and prizes to be won, plus you are helping so many kids by joining camp, purchasing fun merchandise or buying a backpack full of supplies for this kids that are in need of our help.

This brings me to the inspiration for this recipe! When you think of summer camp, the first thing that comes to mind is S’mores right? Well when I think of Christmas I think of candy canes and hot cocoa. So I melded all of these wonderful things together to create “Christmas in July S’mores Pie”!!

Instructions
  1. In a bowl, mix marshmallow fluff, cream cheese and peppermint hot cocoa. Spread half of the mixture over pre-made pie crust.
  2. Lay graham crackers on top of mixture in squares, breaking off smaller pieces to fill in any gaps.
  3. Spread the remainder of the filling on top of graham crackers to completely cover.
  4. In a large Ziplock bag, put remainder of graham crackers inside, seal and crush it to crumbs. Sprinkle all over top of pie to cover.
  5. Use canned whipped cream to spray dollops along the entire edge around the pie. Place a marshmallow in between each dollop. Then, melt Hershey bar in microwave in 30 second intervals and stir until melted. Drizzle all over top.
  6. On a cutting board, chop up green meltaway mint candies (or crush up candy canes) and sprinkle over top for garnish. Let pie refrigerate at least 3 hours to ensure graham crackers soften inside pie. ENJOY! Merry Christmas in July!!!
