Who doesn’t like a cookie for a present? Put these gifts under your tree and Santa will probably take them all back to the North Pole with him! I wanted to mix two classic holiday flavors with these cookies, eggnog and gingerbread! The cookie itself is made with eggnog and warm spices like cinnamon and nutmeg while the frosting that “sandwiches” the cookie has all the flavors of gingerbread with molasses, nutmeg and ginger. You can’t help but be in the holiday spirit when you take a bite! To finish it off, you have to wrap your present! Just use red cookie icing or the icing of your choice to create a bow.

FUN FACT: Back in medieval times when eggnog originated, it was usually only consumed by the wealthy because the ingredients were so pricey. Those ingredients being eggs, milk and sherry.

  1. Cream butter and sugar in electric mixer until creamy. Add eggs and eggnog.
  2. Slowly add your mixture of dry ingredients, flour, baking soda, salt, cinnamon and nutmeg. It will form a sticky dough. Cover and refrigerate for an hour.
  3. Generously spread flour on clean surface (I use a silicone mat) and roll out dough in small batches. Cut with gift or square cookie cutter. Place on cookie sheet and place in freezer for 10 minutes. This will keep your cookies in the same shape rather than spreading out in the oven.
  4. Bake at 375 for 10 minutes and cool completely.
  5. To make your frosting, cream butter, then add molasses.
  6. Add ginger, cinnamon, nutmeg and powdered sugar for about 2 minutes (scraping in between) until it looks whipped and creamy.
  7. Place a dollop of gingerbread frosting on the bottom part of one cookie and “sandwich” another one on top. Decorate with icing bows and enjoy your gift!
