Many of you may not be familiar with farro. It is an ancient grain similar to a risotto consistency. You can dress it up so many ways and make it delicious! Since it’s Summer, I wanted to make a nice, light salad for dinner one night. This is what I came up with and it didn’t take much to make this dish fresh and delish!

FUN FACT: Farro is known as an “ancient grain” or “old world grain”. Certain parts of Italy use it to create semolina flour, which makes pasta!  Farro is extremely high in fiber and has other great health benefits like protein, magnesium and iron.

  1. Boil water. Rinse the farro while water is boiling. Cook farro according to package directions.

  2. On the grill or indoor griddle, cook ears of corn until you get those beautiful grill marks all around.

  3. Dice tomatoes and scallions.

  5. In a small bowl, whisk together apple cider vinegar, vegetable oil, lemon juice, honey, salt and pepper.

  6. Once farro and corn are cooked. Refrigerate both for 30 minutes. Remove from refrigerator and cut corn off the cob. Add all ingredients into the bowl of cooked, cooled farro and place back in the refrigerator for another 30 to 45 minutes until completely cooled.
