No one loves brunch more than me! One of my favorite things to eat for brunch (or any time really) is French toast!! Since I made this to serve my extended family, I wanted to make it on a larger scale, in the form of a casserole. It’s very much like bread pudding so feel free to call it that too!
As I made this for my family, I adjusted the ingredients to make it gluten free and dairy free because my mom has many dietary restrictions. I really wanted her to be able to enjoy this too! So I used gluten free bread and non-dairy coconut milk, and let me tell you, you would never know! This is a super easy, yet yummy recipe everyone can eat!
FUN FACT: Is French toast really French? The actual recipe for French toast can surprisingly be traced back to the Roman Empire, but the name “French Toast” was first used in England in the 17th Century!
