  1. Preheat oven to 375 degrees. In a 9×13 baking dish, whisk eggs, sugar, coconut milk and vanilla.
  2. Add spices and tear up gluten free bread until pan is filled. Push bread down so it is completely saturated. Let sit in refrigerator at least 2 hours or overnight.
  3. Bake at 375 degrees for one hour until slightly golden and there is no liquid left.
