You don’t have to be Irish to enjoy this Irish soda bread! It is one of my absolute favorite things to eat around St. Patrick’s Day, warmed up and slathered with butter and a drizzle of honey.
I took the traditional Irish soda bread recipe and shrunk it! I also added a sticky twist of my own. Using my mini muffin tin, I made tiny bite sized loaves of the soda bread and gave it a “bath” of melted honey butter!
FUN FACT: Why do they cut a cross on the dough? There are a few legends stating that it was originally done as s superstition and brought good luck, or just helps you divide the bread easier once it its baked. You can decide!
