This recipe for Irish Stew was inspired by the Hallmark movie, “As Luck Would Have it!”  This Hallmark original took place and was filmed in the green hills of Ireland in a lovely small town. During a scene where the main character, Lindsay was learning to cook like a native, this recipe was the star of the show!  It looked so hearty and delicious with all the potatoes, carrots and Irish essence that I just HAD to try it! I of course added my own touches and some dark stout beer. This recipe calls for beef but you could also add lamb.

  1. In a stock pot, add olive oil and beef. Salt and pepper to taste. Brown for 3 minutes on each side. Do not cook all the way through as it will continue to cook later in the stew. Once it is browned remove from heat and set aside.
  2. Add more olive oil to the pot and sauté the onions. Once they are slightly browned and translucent, add garlic, parsley, rosemary and thyme.
  3. Bring the cooked beef back to the pot and stir in the flour.
  4. Once it is all fully coated, add beer, beef broth and tomato paste.
  5. Once the liquid ingredients are fully incorporated, add potatoes, celery, leeks and carrots. Add a bit of water if the vegetables aren't fully submerged in liquid. Simmer on low/medium heat for 2 hours until potatoes and carrots are tender and beef is cooked through. ****I made some beer bread on the side to dip!****
