It’s almost Valentine’s Day! I love a yummy, smooth mousse but sometimes all that dairy doesn’t agree with me. Similar to my gingerbread latte mousse, this one has coconut milk as well and gives it that smooth, creamy texture. By the way, this is the easiest recipe you could whip up in no time if you are looking to impress your Valentine last minute. Done forget to feed it to each other!

FUN FACT: Strawberries have a lower glycemic index which make them a great snack for diabetics!

  1. Using an electric mixer with the whisk attachment, beat the Jello mix, cream cheese and coconut milk for about 2 minutes until thick and the lumps are gone. Place in refrigerator for 30 minutes.
  2. Wash 4 strawberries, pull off stems and cut each into the shape of a heart. Save for later.
  3. Wash and slice remaining strawberries and stir into mousse by hand. Place in the refrigerator until ready to serve.
  4. When serving, scoop into a wine glass and garnish with heart-shaped strawberry and fancy straw!
