I love me some fajitas and who doesn’t like a casserole? I combined the two to make this super easy dish that will disappear from your kitchen very quickly! Since I am using green peppers, I wanted to keep going with the green theme. So I used spinach tortillas. Any way I can sneak a veggie into my little one’s diet I will!

FUN FACT: Green bell peppers are very high in antioxidants and vitamin C!  They can also help improve eye health. Carrots aren’t the only veggies in town good for your eyes!

Instructions
  1. Chop peppers and onions and place in skillet with all the spices. Sauté until soft. Place in separate bowl.
  2. In the same skillet, cook your ground sausage or beef until fully cooked. Add salt and pepper.
  3. In a small, square or rectangular baking dish, place one tortilla on the bottom.
  4. Add a layer of your cooked sausage/beef followed by a layer of shredded cheese and then the peppers and onions. Repeat layers at least three times and place one last tortilla on top. Brush with olive oil. This will give you a nice crunch!
  5. Bake at 400 degrees for 20 minutes or so and then sprinkle a bit more cheese on top and pop in oven for another minute just to melt it. Let sit out for about 5 minutes before cutting into it and serving.
