Instructions
  1. Chop peppers and onions and place in skillet with all the spices. Sauté until soft. Place in separate bowl.
  2. In the same skillet, cook your ground sausage or beef until fully cooked. Add salt and pepper.
  3. In a small, square or rectangular baking dish, place one tortilla on the bottom.
  4. Add a layer of your cooked sausage/beef followed by a layer of shredded cheese and then the peppers and onions. Repeat layers at least three times and place one last tortilla on top. Brush with olive oil. This will give you a nice crunch!
  5. Bake at 400 degrees for 20 minutes or so and then sprinkle a bit more cheese on top and pop in oven for another minute just to melt it. Let sit out for about 5 minutes before cutting into it and serving.
