Fourth of July is always a fun time to try new recipes and serve up yummy treats at a family BBQ! I’ve had a silicone star mold in my cabinet for a couple years now and when thinking of something to make for this 4th of July, I knew I had to finally take it out and make something in it!

     Cake pops are so fun and easy to eat. Especially at a BBQ where you are running around and having outdoor fun. No need for a plate or a fork! Since it’s Summer, you can experiment with fresh, tropical cake flavors. I used orange extract in a simple vanilla cake recipe because it reminded me of a Dreamsicle!

FUN FACT: Cake pops haven’t been around that long. There were created in 2008 by a baker in Georgia and are traditionally made by mixing cake crumbs and frosting together to form a ball, then dipped in a hard shell.

  1. With an electric mixer, soften butter and sugar until fluffy.

  2. Add eggs, vanilla and orange extracts.

  3. In a separate bowl, mix flour, baking powder and salt. Slowly add flour mixture to wet mixture and alternate with mixing in the milk. Stir until combined and let rest 5 minutes.
  4. Spray star-shaped silicone mold with non-stick spray and fill half way with batter. Place mold on cookie sheet for easy handling. Batter will make about 20-23 cake pops.
  5. Bake at 350 degrees for 35 minutes. Let cool completely and freeze overnight.
  6. The next day, take cake pops out of the freezer and leave out for 10 minutes. In a microwave-safe plate, melt either the red or blue candy melts in microwave in increments of 30 seconds and stir until smooth and shiny.
  7. Dip one end of cookie pop stick in melted candy melt and insert in cake. Do this for all cake pops. At this point, you may need to re-melt the candy melts a bit.

  8. Using a spoon, carefully spoon on melted candy all over cake pop and smooth out excess. Push pops into Styrofoam to prop up while drying.

  9. Using a small remainder of melted candy melts, fill zip lock bag and cut off tip to drizzle on hardened cake pops. Alternate blue drizzle on red pops and red drizzle on blue pops. Let dry completely before serving!
