Calling all picky eaters!  As a mom of a recent picky eater who used to eat everything, I had to figure out a way to get my little one to eat her veggies!  Kids love waffles and they love sweet stuff, so I came up with a recipe toddlers and kids will love that is super healthy and super delicious!  May I add that my picker eater ate the whole thing!  Score for mom!

FUN FACT: What is the difference between a YAM and a SWEET POTATO?  A true yam is actually very dry, has dark skin and white flesh.  While a sweet potato is from a different family with sweet and softer flesh, and different variations of colors.  The yummy “yams”we are used to in the U.S. are sweet potatoes in syrup!

  1. Wash the outside of your sweet potato and using a fork, poke holes all around it to allow steam to escape while cooking.  Pop it in the microwave on “potato” setting or just 7 minutes if you don’t have that setting.  Flip over and cook another 4 minutes.  Carefully slice it open and let it cool a few minutes before scooping the insides into a big bowl.

  2. While potato is in the microwave and then cooling, shred your carrot(s) with a peeler and then cut them up smaller.  Put those in a big mixing bowl.

  3. Next you will chop your pecans finely and add those to the mix.

  4. You are ready to add your sweet potato!  Scoop out all the “guts” from your sweet potato.  Add your egg, cinnamon, applesauce and a dash of salt.  Stir thoroughly.

  5. Spray your waffle iron with non-stick spray on both the top and bottom and then add half of your mixture onto the center of the waffle iron.  Close lid and allow to cook for 4 minutes.  It will be golden and crispy when it's ready.  Repeat one more time with the remainder of the mixture.

  7. Serve with a drizzle of honey, more pecans and a helping of applesauce.  I hope this will help your little one get their veggies in!
