Thanksgiving is next week already and cranberries are where it’s at! I took a childhood classic that my mom used to make, carrot salad, and turned it into my own. Maybe you are familiar with the carrot salad with the mayonnaise, milk and raisins? I loved this stuff growing up, especially the raisins! I wanted this side dish to be a little more special for the holidays so I used multi-colored carrots to give it a holiday pop of color! Also, instead of the raisins, I used a holiday classic, cranberries which give it the perfect touch of tart sweetness. There are a lot of great colors and textures going on in this dish so get your taste buds ready!

FUN FACT: Did you know carrots started out as just having a white pigment? Also, not much nutritional value?  Over many many years the rainbow of colors mutated from this white “wild carrot” and now contain a ton of health benefits like lycopene and beta-carotene to name a few. Also, each color has their own specific benefit.

Instructions
  1. Using a vegetable peeler, peel all of your carrots into shreds and place in a large bowl.

  2. Whisk together mayonnaise, avocado oil, lemon juice, honey, cloves, celery salt, salt and pepper. Refrigerate for 30 minutes.

  3. In a skillet, without any oil or butter, dry toast the almonds on low heat and stir continuously to prevent burning. This will toast up pretty quickly. Transfer to bowl with shredded carrots once they are toasted because they could burn on the skillet even with the heat turned off.

  4. To the shredded carrot mixture, add your cranberries. Chill for 30 minutes.

  5. Once the carrot slaw and dressing have chilled, (separately) mix the dressing in right before serving so everything stays crisp. Enjoy!
